What goes into the marinade is a matter of some dispute. Everyone's got their own preferences, their own traditions. To create the ultimate carne asada for your family, you'll have to make a few choices. After all, the fun of a dish like this is coming up with your own recipe. That said, after tasting many asadas and comparing many marinades, we've concluded that the following ingredients are essential: Fresh lime juice. Squeeze one lime per pound of steak. Remove the seeds. Fresh onion and garlic – one medium onion and two cloves of garlic, diced – more if you're doing large quantities of meat. Salt and pepper to taste. For the record, some recommend not putting the salt in the marinade and salting the meat on the grill instead. It's up to you. Optional, but recommended ingredients include: Fresh cilantro. You can't really put too much. Diced jalapeño pepper. A bottle of good Mexican lager. A splash of vinegar – plain white vinegar or else red wine vinegar. Non-essential ingredients that we've found in some recipes, which you can consider: A cup of orange juice for sweetness A pinch of cumin, parsley, sage, savory, mustard or paprika. The best way to proceed for your marinade is to start with all the required ingredients, then add some of the optional and non-essentials as you think appropriate.
